Local peach wood is the secret to achieving our signature smoke flavor. From the first bite you’ll pick up on the subtle sweet flavor that this amazing wood imparts.  As they say, “Good things come to those that wait” and that certainly holds true for great barbecue which can take up to 18 hours to cook properly.  Be sure to look for the distinct pinkish ring around the edge of our smoked selections.  This is a unique characteristic of the smoking process called the “smoke ring”, the appearance of which let us know we’ve done our job well.  Simply put we offer the best house smoked peachwood ‘que this side of the mason dixon line but don’t take our word for it…
